It’s so fun to celebrate St. Patrick’s Day with kids! My daughter and I love decorating and setting a leprechaun trap, made out of things we have around the house. That smart leprechaun always gets away, but usually leaves a mess of green glitter, footprints, and a prize or two!
Along with fun St. Patrick’s Day crafts and activities, we look forward to the food! Like Irish soda bread, and corned beef and cabbage, yum! Without a doubt, though, our favorite is St. Patrick’s day desserts!
Every year we search out a fun new dessert to try and make. This year it’s a yummy green Jello poke cake!
How To Make Jello Poke Cake
It’s so easy to make this yummy Jello poke cake! Kids will especially love to be put in charge of poking the holes (chopsticks work nicely for this)! So, grab your favorite kitchen helper, and let’s get started.
This Jello Poke Cake Recipe:
- Serves 12-15
- Prep Time: 10 minutes
- Cook Time: 25 minutes plus chilling time

The ingredients for this poke cake recipe are basic pantry staples!
Ingredients – Jello Poke Cake
- 1 box white cake mix
- 4 large egg whites, room temperature
- 1 cup buttermilk
- ½ cup vegetable or canola oil
- 1 small box (3.4 oz) lime gelatin (any flavor will work)
- 1/2 cup cold water
- 1 cup boiling water
Frosting Ingredients
- 1 (8 oz.) tub whipped topping, thawed
- 1 small box (3.5 oz) instant vanilla pudding mix
Toppings
- Additional whipped topping
- Sprinkles
- Fresh limes
Instructions – Jello Poke Cake

I love that you can switch the color of the Jello up so that this Jello poke cake recipe works for any holiday!
Step 1
Preheat oven to 350 degrees and coat a 13×9 baking dish with non-stick cooking spray.

Make sure your cake batter is nice and smooth!
Step 2
Combine cake mix, eggs, water, and oil until smooth.

This is one of my favorite recipes to make with my daughter! Kids love poking the holes into the Jello poke cake!
Step 3
Spread evenly into baking dish, bake for about 25 minutes or until a toothpick inserted in the center comes out clean.

Let your cake cool briefly before you start poking holes into it!
Step 4
Remove from oven and let cool for 15 minutes.

This is the best part of prepping a Jello poke cake!
Step 5
Combine gelatin and boiling water and stir about 2 minutes until dissolved, add cold water.

How cool is this Jello poke cake?!
Step 6
Using a wooden skewer or large fork, poke holes into cake about every 1/2 inch.
Step 7
Carefully pour gelatin over the cake.
Step 8
Place in refrigerator at least 3 hours or overnight.
Frosting

Yum! Homemade frosting is the best!
Step 1
In a mixing bowl, combine whipped topping with pudding mix until completely smooth.

The hardest part is not eating all the frosting before it gets on the cake!
Step 2
Spread over cake.
Step 3
Store in refrigerator until ready to serve.

Store leftovers in refrigerator covered with plastic wrap.

How To Make a Gluten Free Jello Poke Cake
Super easy! Just grab a gluten free vanilla cake mix, and gluten free lime gelatin (like Simple Mixes lime gelatin mix, on Amazon!).
Double check that all of our other processed ingredients are gluten free, and then you’re good to go!
