Rotel is a yummy appetizer that always hits the spot! I love that it is super cheap and easy to make.

What is Rotel Dip?

Rotel dip is a delicious and easy dip recipe that is similar to Queso. It is a combination of salsa, cheese, and meat–and it’s addictive!

You only need four ingredients for this Rotel cheese dip.

Rotel dip is made out of 4 simple ingredients that you most likely already have in your fridge and pantry. This makes it he perfect last minute Game Day recipe!

To make Rotel, you need: 

  • 1 pound ground beef
  • 1 (10 oz) can Rotel tomatoes, Original, undrained
  • 1 (16 oz) package Velveeta cheese, Cubed
  • 1 tablespoon taco seasoning

There are so many different things you can serve with Rotel dip, like pretzels, corn chips, and fresh vegetables. Mini peppers are my favorite!

How to Make Rotel Cheese Dip

I love slow cooker recipes, like this Rotel dip recipe–it’s so easy! Just throw everything into the crockpot, and let it simmer away during a party or game.

Be sure to drain all of the grease out of the beef when you brown it.

1. In a skillet over a medium-high heat brown ground beef.

Cut the cheese into cubes, for even cheese distribution.

2. Cut cheese into 1 inch cubes.

If you have a crockpot liner, us it to prevent a mess!

3. Add ground beef and cheese to crockpot.

Have you ever tried making your own taco seasoning? It’s so easy!

4. Sprinkle on taco seasoning.

Just add the Rotel tomatoes, and then you are all set!

5. Pour Rotel tomatoes over it and stir to combine.

Set everything up in your crockpot an hour or so before your gathering starts. Then, it will be halfway done when people arrive, and it will be nice and fresh once you serve it!

6. Cover and cook on high for 2 hours, or until cheese is hot and melted.

Leave it to simmer in your crockpot to keep it warm.

7. Turn down the crockpot to warm and serve.

How Long Does Rotel Dip Last in the Fridge? 

If you decide to use meat in your Rotel dip, it can last up to three days refrigerated. If you make it without meat, it can last for four days.

Although, I wouldn’t refrigerate anything that has been sitting out with people dipping into it. Toss that to be safe!

Take your Rotel a step further and use it in some of these yummy recipes! 

  • Rotel Nachos are so easy: Just add Rotel as the topping in your basic nachos recipe
  • Make Rotel Taco Soup: Rotel can either be mixed into your favorite taco soup recipe, or used as a topping! 
  • Up your chili game with Rotel Chili: This one is delicious for Game Day! Either mix Rotel into your chili recipe, or use it as a chili topping.

Serve vegetarian Rotel dip with fresh veggies!

Is Rotel Vegan or Vegetarian? 

You can make vegan Rotel if you eliminate the meat and standard cheese.

Instead, opt for a vegan beef crumble substitute, like Beyond Meat’s meatless “beef” crumble. There isn’t a vegan Velveeta option, but there are tons of recipes out there to make your own out of nuts.

For a vegetarian Rotel dip, just omit the meat.

When serving gluten free Rotel dip, make sure that the items you are serving it with are gluten free–like gluten free corn chips and fresh veggies!

How Can I Make Gluten Free Rotel Dip? 

Rotel is already gluten free–it is just cheese, meat, and tomatoes. I always double check the labels on any processed ingredients, though, to check for cross contamination. 

If you are making gluten free Rotel, be careful when it comes to what you choose to dip in your Rotel.

Fresh veggies, gluten free corn chips, and gluten free crackers are great, safe choices! 

Make sure you have a separate bowl of dip and items to dip, if you are hosting and have someone with gluten allergies attending, because even a tiny crumb can make them ill. You can even put a cute little sign or label nearby stating that it is gluten free, to keep everyone aware!
