To make Rotel, you need:
- 1 pound ground beef
- 1 (10 oz) can Rotel tomatoes, Original, undrained
- 1 (16 oz) package Velveeta cheese, Cubed
- 1 tablespoon taco seasoning
How to Make Rotel Cheese Dip
I love slow cooker recipes, like this Rotel dip recipe–it’s so easy! Just throw everything into the crockpot, and let it simmer away during a party or game.
1. In a skillet over a medium-high heat brown ground beef.
2. Cut cheese into 1 inch cubes.
3. Add ground beef and cheese to crockpot.
4. Sprinkle on taco seasoning.
5. Pour Rotel tomatoes over it and stir to combine.
6. Cover and cook on high for 2 hours, or until cheese is hot and melted.
7. Turn down the crockpot to warm and serve.
How Long Does Rotel Dip Last in the Fridge?
If you decide to use meat in your Rotel dip, it can last up to three days refrigerated. If you make it without meat, it can last for four days.
Although, I wouldn’t refrigerate anything that has been sitting out with people dipping into it. Toss that to be safe!

Is Rotel Vegan or Vegetarian?
You can make vegan Rotel if you eliminate the meat and standard cheese.
Instead, opt for a vegan beef crumble substitute, like Beyond Meat’s meatless “beef” crumble. There isn’t a vegan Velveeta option, but there are tons of recipes out there to make your own out of nuts.
For a vegetarian Rotel dip, just omit the meat.
How Can I Make Gluten Free Rotel Dip?
Rotel is already gluten free–it is just cheese, meat, and tomatoes. I always double check the labels on any processed ingredients, though, to check for cross contamination.
If you are making gluten free Rotel, be careful when it comes to what you choose to dip in your Rotel.
Fresh veggies, gluten free corn chips, and gluten free crackers are great, safe choices!
Make sure you have a separate bowl of dip and items to dip, if you are hosting and have someone with gluten allergies attending, because even a tiny crumb can make them ill. You can even put a cute little sign or label nearby stating that it is gluten free, to keep everyone aware!
