This Basic sponge cake without baking powder is a healthy dessert loaded with the goodness of whole wheat and jaggery. Whole wheat is nutrient and rich in fiber, supporting healthy digestion. Whereas jaggery works as a detox and is loaded with antioxidants and minerals like zinc and selenium. This simple cake can be made without oven and made even more nutritious by adding fruits.

Ingredients:

  • Whole wheat flour – 1/2 cup
  • Butter – 200 g
  • Eggs – 3
  • Few drops of vanilla essence
  • Jaggery – 200 g
  • Milk – 6 tablespoons

Method:

1. Break eggs in a bowl and add vanilla essence.

2. Beat well.

3. In another bowl, take butter, jaggery and whisk well.

4. Sieve the flour and add it into the creamed mixture.

5. Add beaten egg mixture to it and blend it well.

6. Finally add milk and mix well.

7. Grease the aluminium cake tin and dust with wheat flour on all sides.

8. Pour the batter into the cake tin.

9. Boil water in a cooker (this is equivalent to preheating the oven), place the cake tin and close the lid without the weight.

10. Cook on medium heat for 20-25 minutes.

11. Check the cake with a toothpick. If it comes clean,  your cake is done.

12. Let it cool for 10-15 minutes before unmoulding it to a plate.
