We have a fun Taco Tuesday twist on a casserole to try since Taco Tuesday falls on Cinco de Mayo this year… Taco Tater Tot Casserole!
When it comes to easy recipes, this is the best! You can also easily convert this to a slow cooker recipe version!
We love Tater Tot Casserole, or as Minnesotan’s call it – “hot dish”! It’s one of our favorite comfort foods to make on cold days, or when I’m in a hurry, because it’s so easy to whip together and bake!
We have a delicious Slow Cooker Tater Tot casserole, from the Taylor House, that is even simpler because it cooks all day while you’re working or homeschooling! Yay!
I thought it would be fun to put a twist on our favorite two meals by mixing a little taco into our tater tot casserole. It’s so good, your kids will love it!
How to Make Taco Tater Tot Casserole

Ingredients:
Instructions:
- Start by browning your ground beef in a medium pan over high heat.
- Once the meat is completely browned, mix in your taco seasoning and water and simmer for five minutes.
- Next, mix in your corn, 2 cups of cheese, and black beans before spreading into the bottom of a 9 x 13 baking dish.
- Top with Tater Tots (you do not need to arrange them perfectly, they cook the same no matter what).
- Sprinkle the remaining 1 cup of cheese over the top, and bake at 350 degrees for 20 minutes.
- Top with lettuce, tomatoes, olives and sour cream!

We used to go t0 our favorite taco place on Tuesday nights, but this Taco Tater Tot Casserole, as well as a good old-fashioned DIY taco bar have replaced that tradition entirely! I love that we have more time together, and can bond while making our own meal. Plus, it’s healthier and cheaper than eating out, which are two added bonuses!
