How to Make Blueberry Ice Cream

There are a few ways to make this Blueberry Coconut Ice cream. You can make it with frozen blueberries or fresh blueberries.

To make with fresh blueberries: Combine all ingredients in a blender and blend until smooth. Pour into a shallow container and freeze for 2 hours or until frozen all the way through. Scoop ice cream into small bowls and enjoy!

To make with frozen blueberries: Set blueberries out for 10-15 minutes and let the fruit soften just a bit. Combine ingredients in a blender and blend until smooth. Another option is not to let the blueberries soften and blend in a food processor. It won’t be as smooth, but still delicious!
