Inspired by warmer weather, our Lemonade Cake is the perfect addition to any springtime celebration. It also makes a great birthday cake that’s not too sweet (no need to scrape the frosting off this cake).

Our Lemonade Cake is super easy to make and comes together in literally 10 minutes or less, if you are willing to use a store bought angel food cake like we did. Buy the lemon frosting too and you’ll literally cut off even more time. Lemonade Cake is the perfect lemon cake recipe for a last-minute dessert, birthdays, potlucks, and even to take to someone that needs a little encouragement.lemonade cake 3lemonade cake 4lemonade cake 1lemonade cake 2

Lemonade Cake

Ingredients:

  • 1 prepared angel food cake, bundt style
  • 1 can lemon frosting or your favorite homemade lemon frosting
  • 2 lemons (one for zesting, one for slicing)
  • peppermint (for garnish)

Directions:

Slice angel food cake in half to form two circles. Brush off excess crumbs. On bottom layer of cake, spread about a third of the lemon frosting on top. Using a grater, zest with lemon peel from half of one of the lemons. Place top layer on frosting. Frost with remaining lemon frosting. Zest with other half of lemon peel. Slice the remaining lemon into several thin coins. Decorate top of cake with lemon slices.  In center of angel food cake add a bouquet of peppermint.
